What Makes It Ceylon
Ceylon and cassia are not the same.
Many products sold simply as “cinnamon” are cassia — a darker, harder bark with a stronger, spicier flavour. Ceylon cinnamon, also known as Cinnamomum verum, is lighter, softer, and rolled into delicate layered quills.
